Finadene is Guamanian hot sauce, and they put in on EVERYTHING... I had if for the first time this last weekend and I had to make it for myself.. Add it to steamed rice, chicken, fish, etc.. You can even use it for a marinade

INGREDIENTS
1⁄4 cup white vinegar or 1⁄4 cup lemon juice
1⁄2 cup soy sauce
2 green onions, thinly sliced or 1 small white onion, finely
1-2 cloves minced garlic
chopped
3 -5 small minced hot peppers(seranno, piri piri, or boonie)

Pour the vinegar or lemon juice into a bowl.
Add soy sauce a little bit at a time to mix it according to your taste.
Add the onions, garlic and peppers.
Chill until ready to serve.

This is good stuff....I especially like it over plain old white rice. Virtually every restaurant on Guam will have a big bucket of the stuff on the counter with a ladle in it.

 

 There are lots of ways to do it, but seems like the vinegar/white onion combo is what you'd most commonly see. I've tried my hand at kelaguen a time or two, but have been underwhelmed with the results.

I did green onions and equal parts vinegar/lemon juice... I agree, it’s awesome on plain white rice

Made a new batch today 2x the fresh chili’s, red pepper flakes, green onion, and garlic in the same volume of soy sauce, white vinegar, seasoned oil, and I added a skoch of lemon juice this time

Made a new batch today 2x the fresh chili’s, red pepper flakes, green onion, and garlic in the same volume of soy sauce, white vinegar, seasoned oil, and I added a skoch of lemon juice this time


Made another batch this morning... Kind of the same recipe, but this time I added a tsp of fresh minced ginger, and s splash of fish sauce... should be great by tomorrow

This has to be a similar sauce the Hawaiians make Poke Bowls with, though the vinegar ratio is a bit high.  I've been making Poke on the reg since I got back from Hawaii back in Oct.  Actually having a bowl for lunch now.

That's not too far from what my favorite thai place serves. I think it's basically fish sauce, lime juice, and sliced chiles.

I made a batch, it's pretty good. I used whatever peppers were available in my garden (a small tabasco, 2 jalapenos, and 3 cowhorns). Just had a bowl of rice with finadene for dinner.
