Amarillo Saison

I think Amarillo should pair well with the yeast. I am looking for some advice or direction for a water profile and pH range for saisons that others have had success with.

drezz, I believe it's Denny and Drews's first episode of Brew Files January 11 2017 where Drew boasts his 'Saison in Amarillo." I don't recall if he said much on the water but his recipe seemed pretty slick.

Thanks for that.  I think I will reach out to Drew on FB and see if he has a preferred profile for Saison water.  Since he is the saison guy.

Drezz, did this one ever get off the ground?  I recently made a 3711 with Amarillo in the whirlpool.  It's on tap now and it is delicious.  Actually it's the recipe I posted the other day in "pint pictures."

Bump as I'm curious as well. Just thinking Saison today and I have a bunch of Amarillo.

Sorry!  This was a tasty beer and with the bump of this thread I think I am going to look for some saison yeast and do it again.  I do not think I will change anything on the recipe except the yeast because I am not sure what I can get.  I have to dig through some old files to find the water profile I settled on for this one. Once I do I will post it.

Amarillo plays so nicely with the spiciness and/or fruitiness of saison yeasts.  My 4th use of 3711 used a simple recipe and this time I substituted some El Dorado for the Amarillo, all other things remaining the same.

I can see the candy flavor of the El Dorado working well in this.

Is this yeast hard to get? I've never heard of it. It didn't blow you away enough to seek out again obviously.

The yeast is currently out of stock - https://bootlegbiolo...d-saison-blend/ and it did not WOW me enough to try again.  Truth is I stepped away from 3711 because at the time everyone was using it it was said to be boring and predictable.  I think I like boring and predictable so I most likely will go back to it.

I was ordering some other stuff and threw in a package of 3711.  When my re-brew happens .. up in the air.

So I don't have any wheat. Now I'm kinda leaning towards subbing that with Rye. And Drez did you happen to get a water profile from Drew for this?

I made a big saison with Belle once. It was very enjoyable. I'm guessing people that are really into saison would say it's bland though.

Going to grab some wheat today. About the corn sugar, that's the same as priming sugar correct?

I made a big saison with Belle once. It was very enjoyable. I'm guessing people that are really into saison would say it's bland though.

I've used Belle in the past and have enjoyed it as well.

Yes, same as priming.  In reality, I bet I used regular granulated sugar.

That's what I thought. I have a bunch of these 5oz bags that just say "priming sugar" on them. Left over from beer kits I suppose.
