Change of plan: tomorrow will Dortmunder day. 

 

Water is filtered and salts/lactic acid added.  Grain will be crushed while strike water heats tomorrow a.m.

I have an amber lager coming up this weekend and it will be the last run of the S-189. I'm considering making a starter for some Omega West Coast so I can have double-barrel ale action coming up. I failed with my planning... I should really have a nice fall pale ale on tap right now and I don't. My next beer with the 1469 or maybe the West Coast will be a pale ale with US and Styrian Goldings. I might be able to pull of the lager on Friday evening and the pale ale with West Coast Saturday or Sunday... weather permitting.

Hope to finally get in a couple brews between tomorrow and mid next week.  Just turned in 2 chapters and got the podcast out so I have to breathe and brew!  I intend to go back to my American mild project using YCH debittered leaf as mash hops, Mecca Grade malt and 1450.

I've got my Magnum and Cascade now, and 10 gallons that should be ready to keg on Sunday with fresh yeast cakes.  I'm going to try an exact Sierra Nevada clone.

Setting sights for a 10 gallon batch of Kolsch w/ Omega Kolsch II, pils and pale half and half a little Vienna, hallertau and spalt select.

Yep.  If you listened to the last show, we talked to Bryan Pierce of YCH about it and he said that's how he's using the debittered leaf.  Gets about 15 IBU/lb./bbl.  If he says it works, I've gotta try it, so I'm using debittered Loral leaf in the mash.  We'll see.

Is there a benefit to getting your IBUs this way or is it just for grins?

I'll be brewing today (amber lager with S-189). It's been cold and snowy here today so this will be the first brew of the season under less-than-ideal conditions. It was about 19° this morning and I think it's up to about 25° now. I also made a starter this morning with some geriatric Omega West Coast (December of 2016). I got the starter ready and opened the pack... it looked and smelled great so I'm optimistic. I'm hoping that it's active by Sunday so I can also make a pale ale this weekend: Swaen Pale Ale malt, wheat, Nugget to bitter and then late US Golding and Styrian Golding + the West Coast. Fingers crossed.

Rye pilsner with spalt tomorrow. I need to figure out what yeast though. I hope you brew my house APA, Waterpark, Sunday using London Fog from the White Labs vault.

7 lbs Swaen Pale Ale Malt
2 lbs White Wheat
7 ounces CaraRuby
.5 ounces Nugget pellets 14.6% for 30
1 oz US Goldings 4.3% for 10
1 oz Styrian Goldings 3.0% for 7
1 oz US Goldings 4.3% for 4
1 oz Styrian Goldings 3.0% for 1
Omega West Coast Ale Yeast

OG: 1.052, FG: 1.012, IBU: 36, SRM: 7, ABV: 5.0%

34/70 for the pilsner and London Fog will be in the pale ale.

Made a Pils tonight. Barke Pils and a half-pound of Carahell to 1.048. Magnum to bitter at 30 and a solid whack of Hallertau Blanc at 10 and again at 0 min. A pack of 34/70 to get it all rolling.

If we're counting making a starter as brewing, then yes, I'm brewing.

 

Making a wake-up starter for some 34/70 that will be pressed into service next week for a G. pilsner.

Only my third brew this year. Centennial IPA, heading to mash soon...

 

Enjoying the crunchy , fresh grains before the mill..
