Safbrew S-23 "True German Lager" yeast from Fermentis, 11.5g Has anyone used this ?Safbrew WB-06, new wheat beer yeast from Fermentis! 11.5g Ive seen a few posts where this has not had the best reviews then others say its good but you all seem to be more detailed in your responses Safbrew US-05 (prev. US-56!) "American Ale" yeast from Fermentis, 11.5g This seems to have great reviews. from alot of people on here I plan on ordering 5-10 US-05 for sure its the others im wondering about.

Although some people seem to make good beer with S-23, I and many others have had a really bad experience with it. In my case, the beers turned out disgustingly, undrinkably fruity.

If you're going to brew a lot you need to take up yeast culturing.

Let me preface this by saying that I'm a big fan of dried yeast. I use it for almost every beer I make.I've had terrible results with S-23. Like Denny, I get fruit, fruit, fruit.Not a fan of WB-06, either. I wanted to like it, but I was unimpressed. The result wasn't bad beer, but it wasn't bavarian wheat, or truly clean enough for american wheat. Strange.US-05 I like. It ferments about 70% of my beers. It does ferment aggressively, though, so you'll want to mash a degree or two higher than with liquid Wy1056.

Denny, did any aging reduce the amount of fruitiness? At what temperature was fermentation?

I believe the Saflager W-34/70 is a pretty good yeast. Personally, I've never brewed a real lager but a guy at my LHBS brewed a split batch between the 34/70 and a Wyeast equivalent and we all liked the dry better. Not to say that the Wyeast wasn't good, but the dry was more crisp and clean, It was more drinkable. Hope it helps!
