I finally had a success with gluten free brewing. Instead of trying to get a dark beer style, I went the other way and created a delicious IPA like beer. I've found myself gravitating towards that style these days anyway (although it turns out my wife who these beers are made for is not quite the hop head I am). I brought some up to the local brew shop and everyone absolutely loved it (and these are Maharaja and 120 min IPA people).6 lbs white sorhum extract2 frozen/thawed/mashed bananas5 oz. lactose5 oz. maltodextrin1 oz. sweet orange peel1 oz. cascade 60 min1 oz. cascade 15 min1 oz. amarillo 15 min1 oz. cascade 5 min1 oz. amarillo 5 min1 oz. amarillo flameout

I corrected the above recipe...my original post had the wrong hops (confused with another one I'm doing). It's not overly bitter (but enough) and is very citrusy. I think it's a beautiful summer IPA. 6 lbs white sorhum extract2 frozen/thawed/mashed bananas1 oz. summit (60 min)5 oz. lactose (30 min)5 oz. maltodextrin (30 min)1 oz. summit (15 min)1 oz. amarillo (15 min)1 oz. sweet orange peel (5 min)1 oz. cascade (flameout)1 oz. amarillo (flameout)
