I should mention that the recipe I posted in post 1 was put through the calculator on Tastybrew.com and that calculator does not have Midnight Wheat as an ingredient so I faked it with carafa or debittered black, etc. The SRM 13 is based on that so this one might be more in the 10-13 SRM range if I had to guess. If you're looking for darker, 4 ounces of MW would be nice, I think and I don't see much roasted flavor coming from it. I also put my version of Jamil's Vienna on tap this week and I used dehusked Carafa III in that one... super smooth with good color.

Had a glass of this beer while making dinner tonight. Really, really nice character to this beer and I could see it becoming part of my regular rotation. Anytime I have 1056 or WLP001 up & running I might think of the beers I like to make (my blonde ale, MLPA, Signature Ale, etc) and this one will probably go on that list.

So as I think about these Amarillo and/or Citra beers, (Chilly Water recipe I posted, Gumballhead), etc., it occurs to me that this "Dark Hoppy Wheat Beer" is pretty much the same equation with color added. Without the dark color in this beer, it's a wheat-based beer with late Citra hops. I have this recipe sitting in my beer bunker waiting to be made and I wonder if I should make it "as is" or make a version of it without the color. Could be very nice, I think.

Hmm, I have seen that pic before and it's beautiful. If I were to make this beer without the color, I might still try to get a bit of amber color in it but we'll see. Yours looks almost like a pilsner! Cheers.

I think this was 50/45/5 Pils/wheat/caravienne if my memory serves me right.  I would love to have a glass of that at my desk right now!
