Oh please, I am not great or powerful at all.

 

mags for NB should make little difference on the final beer.  I am looking forward to this one.  I think I may call mine slimy move stout :)

 

i'm going to drink the beers you send me, secretly enjoy them, and then tell you didn't like them that much and demand a refund.

minor issue - all i have is a pound of chocolate wheat.  not midnight wheat.  i do have debittered black and carafa special.  which should i replace with?

Isn't Midnight Wheat the same as Chocolate Wheat? I haven't used the MW.

it looks like mw is more roasted if i remember correctly.

ultimately i think either one would be okay.  the main thing is no husk so that it doesn't add harshness.

ferm is done.  no problems yet.

 

i am now starting the chilling process to drop the yeast out before I keg this sumbitch.  i have a good feeling about this beer.

 

eta:  when i brewed this beer i went with the "don't mess with the water" theory.  i have soft water so this beer had really low calcium, sulfate, chloride, sodium and bicarb.  just the malt alone put me around 5.4 predicted and 5.5 measured with my colorpHast strip.  i almost added some gypsum and/or calcium chloride but i exercised some self control and just let the beer gods have their way with me.  based on the smoothness of the hydrometer sample i believe i made the right decision.  the beer seems like it will be medium/full bodied with some sweetness with a little bit of dryness on the back end due to the roasted grains.

been drinking this for a little while now.  it's a solid stout.  very smooth and enjoyable.  it doesn't seem as high ABV as it is which is a little dangerous if you aren't paying attention.

 

changes I might make:

perhaps a little more RB and/or carafa special/midnight wheat (i used carafa spec, drez used MNW)

i might try a different yeast as I'm not a HUGE fan of S-04 but now that the beer has aged a little i'm finding the S-04 to be just fine.

 

drez and i both had minor issues getting the gravity down quite as low as we'd like so make sure to really throw some healthy yeast at this thing!

Mine has only been in the keg for a week and is still clearing but the overall flavor is good.  I agree I would kick up the RB to a # or even 1.25.  I would go with WLP001/1056 type of yeast to get the gravity down more.  For me the S-04 just did not work out in this beer as I had hopped.

 

I plan to are-brew this one before winter is done with the above changes.

nice!  i'll get around to agian sometime, probably not until fall though the way things are going.

 

i agree on the amount of RB.  I think I would lean more towards 1.25 lbs but even 1 lb might be enough to make the difference.  it's hard to say.

Chocolate Milk Stout

 

1.062 OG - 26 IBU - 33 SRM - 5.5% ABV

 

12.25 lbs. 2-Row

3/4 lb. Chocolate Malt

1/2 lb. 60L

1/2 lb. Cara-Pils

1/2 lb. Black Patent

1/4 lb. Roasted Barley

 

1 lb. Lactose (10 mins)

6 oz. Cacao Nibs (secondary for 5-7 days)

 

1/2 oz. Northern Brewer (60 mins)

1/2 oz. Northern Brewer (30 mins)

 

1056

 

Your pre-boil gravity should be around 1.044.  The Lactose will bump your OG but will not ferment out so I usually get this down to about 1.020 as my FG.

that will be quite different if you used debittered black malt the first time and black patent this time.

I brewed this latest batch with the BlackPrinz Malt.  It's almost fermented out and tasting absolutely delicious.  Smooth, creamy mouthfeel with just a hint of roastyness...lots of chocolate and slight coffee notes as well.  Going to toss 4 ounces of Cacao Nibs in the secondary for a week too.  Excited about this one!

Today some beer tourists were at my house and a surprising number really enjoyed this beer... Even though I was serving it at 60F! Who knew?!?
