YEAST:I was down at the Schalfly Tap Room a couple weekends ago and had some of their IBA. It was wonderful so props to Stephen Hale. Thought I'd give it a crack and put my own recipe together....thoughts?

Drew - did you ever get chance to put this in front of Brennan? BTW...I know you brewed some of the Schlafly Pumpkin Ale! Great work!He was in a bit of hurry, so we didn't get to it. But, we'll be brewing together all day on Thursday, we should find time then.

Yeah, they're always going on about McDole's American Brown on Jamil's show. Definitely one I want to try. I think it's in Brewing Classic Styles, too.Chad, If you're still interested in an IBA, the latest issue of Zymurgy has Mike "Tasty" McDole's "Janet's Brown." I haven't made it but I hear it's a crazy good brown.

I thought the same when I first started making American browns, but there is so much malt backbone vs an APA or even an IPA, that the extra 10 or so IBUs that you think may be overwhelming, are actually necessary to give some balance. When I backed off in my recipe I was disappointed. Now I am right back up there on the IBUs, and I go for 65 on a .070 beer. Just my $.02His is a little hoppier than I want I think though so I'll go with my hop bill.
