Will the AIPA be aged enough at this point? I was leaning that way as well just b/c I feel like having something hoppy.If it were me, I'd save the Scottish a little longer. It's more of a fall beer, IMO.

You gotta drink those IPAs as fresh as possible. It's been almost 3 months since brew day. Drink Up.Will the AIPA be aged enough at this point? I was leaning that way as well just b/c I feel like having something hoppy.

Your AIPA is a little bigger than mine, but I've been drinking the one I brewed in early-July for the last few weeks. Tastes great. It'll probably get a little better with age, but I think it's pretty damn good now.Will the AIPA be aged enough at this point? Yeah - I'm a little concerned about the FG on it but it's still under the high end of the style guideline so hopefully it won't seem too sweet.Your AIPA is a little bigger than mine, but I've been drinking the one I brewed in early-July for the last few weeks. Tastes great. It'll probably get a little better with age, but I think it's pretty damn good now.

Not worried now - I just tasted what was left in the siphon hose and it's pretty incredible. I can only imagine it will get better with carbonation...Yeah - I'm a little concerned about the FG on it but it's still under the high end of the style guideline so hopefully it won't seem too sweet.

With 95 IBUs, I think you'll be fine. I accidentally mashed 3-4 degrees too high on mine, it started at 1.064, finished at 1.020, and only had 75 IBU. I can definitely detect the sweetness, and it's not what I was going for, but it's not cloying or unpleasant at all. It's got great body, but I was looking for something drier.Yeah - I'm a little concerned about the FG on it but it's still under the high end of the style guideline so hopefully it won't seem too sweet.
