Okay, maybe I'll place an order there for the RedX and also the TF&S dark crystal as I am out of that as well. I have this WLP011 working in my pseudo-altbier and I wonder if I should use it again on something with the RedX, Special B and TF&S crystal. A sort of red ale maybe? Hop it up a little bit more towards the end of the boil? What was the story with the new(er) hops HBC369 or something like that? I'm looking for a completely new and off-the-map experience here with the malt, the yeast (relatively off the map for me) and the hops. I know it was mentioned that the WLP011 leaves behind such a malt-forward beer but I don't see a reason why you couldn't hop it up a little bit.

Okay, get this. I went to Farmhouse and picked up 20 lbs of REDX and the TF&S crystal. I picked up some German Magnum and I was going to grab some of this Mandarina Bavaria (mentioned in the SN thread in the Vienna Lager) but they only had 1-pound bags... they were "out" of the 4 oz bags. I haven't tried this hop so getting a pound (for $21) seemed silly. But I did ask them if they could package up some 4oz bags from a 1-pound bag and add it to the order. We'll see. In the meantime I wanted a different hop for this beer and many of the unusual hops were out of stock so I got a 4 ounce bag of Ultra pellets which I have always heard good things about but never used. So a REDX beer with maybe 3-4 ounces each of Special B and TF&S Dark crystal, Magnum to bitter and either Ultra or Mandarina Bavaria to finish and then maybe WLP011 or maybe just 1056. Thoughts?

It sounds like mine with more dark crystal and different late hop varieties.

Oh, right. I stole your idea. :P Seemed like such an easy recipe to put together... no wonder, someone already did it for me. :DSo I heard back from the guys at Farmhouse and they said they would get me 4 ounces of the Mandarina Bavaria. I'm going to do something like this:RedX Red Ale9 lbs Best Malz RedX3 ounces Belgian Special B3 ounces TF&S Dark Crystal #1 (80-93L).4 ounces Magnum 13% for 60 mins1 ounce Mandarina Bavaria 7.2% for 101 ounce Mandarina Bavaria 7.2% for 51 ounce Mandarina Bavaria 7.2% for 1White Labs 011 European Ale YeastOG: 1.052, FG: 1.013, IBU: 40, SRM: ??, ABV: 5.0%My guess is that the color will come in somewhere around SRM 12 or so... a dark red. I would mash relatively low (150°?) because of the WLP011's low attenutation number. Balanced water profile, all filtered tap water, etc. Should be very interesting.

Country Malt stocks Red X, so any shop that gets anything from them can get it, at least on special order.  I am surprised so many shops don't carry it.  It is an excellent malt.

I had to order some stuff from NB today and asked them why they don't stock it.  The phone guy (who probably doesn't do the purchasing  :P ) said that they don't stock it probably because they have carared :huh:

Thats funny. Im going to be at NB in Mnpls in a couple of days. Ill try to think of it and ask them while Im there.

I tried CaraRed a couple of times and it seemed to be like C20 or C30... just a light crystal malt. It wasn't RED RED by any stretch and I highly doubt you could use CaraRed as 100% of the grist. Definitely apples-oranges.

When you first dough in, it looks like any other base malt. Then the magic happens  :D

Mine was 100% Red X back on post 86.

Interesting. Yours looks to be quite a bit darker than BlKtRe's but that could be any number of things including yours possibly being a bigger beer (more grain) and possibly even water and pH adjustments could futz with the color a bit. Quite a bit of color there for sure.

I had a OG of 1.066 I believe. Not sure on the water, would have to look back at my notes. But probably used a basic pale ale water profile.

So here's the question: I will have about 11 pounds of this RedX malt left after I make this Red Ale I'm looking at. With the leftover RedX, should I mix it with something like pilsner malt and get a slightly red-amber beer? My next lager yeast is either going to be Wyeast 2000 Budvar or Wyeast 2206 Bavarian and I'm leaning towards 2206. I could make a lager with RedX and Pils and then a bunch of nobles or I could use RedX for 100% of the grain bill and use no other malts. I supposed I could also use just one hop and make it a SMaSH beer... maybe 100% RedX and then these Ultra hops I have. What to do!?

I could see that. But I think I only have an ounce of Saaz in the house. I have a bunch of Hallertau, some Tettnanger and some other possibilities though. Also, when you say "mash low", what are you thinking... 150°?

That's up to you. I would look at my pics using two different percentages and if you want to redden up the one with less Red X go for it. This is why I posted the comparison pics so others could make a decision on how much to use.
