Buttermilk Biscuits

 

These are real easy to make and take very little time.  I use a food processor.  Makes about 18 or more biscuits depending on how thick you want them.  Preheat oven to 450.  You can make the dough faster than your oven get to 450.

 

Ingredients

 

4 cups all purpose flour

2 T baking powder

1 t baking soda

2 T sugar

2 t salt

 

1 cup (2 sticks) unsalted butter

1.5 C buttermilk

 

Some extra butter for brushing on the biscuits.

Some extra flour to flour your board.

 

First, cut your 2 sticks of butter lengthwise and then lengthwise again and then cut into small cubes and stick in freezer.

 

Put all the dry ingredients in your food processor and pulse to mix.

 

Mix into your processor the frozen (very cold) butter cubes until its coarse - it's okay if a few butter cubes remain.

 

Add buttermilk and and pulse enough until it all mixed - a few times.

 

Dump dough onto floured board and kneed.  Kneed it for a minute or two or three - don't kneed it so much that the butter gets warm and melts.

 

With a floured rolling pin, roll out the dough.  Resist the urge to roll the dough thin.  If you roll it/leave it relatively thick it will still make around 18 nice thick biscuits.

 

Use a biscuit cutter or a floured drinking glass and cut your biscuits.

 

Place on un-greased cookie sheet - NOT touching each other.

 

Brush them with melted butter.

 

Bake at 450 for 12-15 minutes - but check them at 10 minutes depending on your oven.
