A New Start Community Brew - The Recipes

The Recipes!I'm not an all-grain brewer, so let me know if something is amiss in that recipe.A New Start Community Ale:All Grain:Pale Malt (2-row) 5.5 lbs 52.4% (replace base malt at your choice)Wheat Malt 3.5 lbs 33.3%CaraWheat 0.5 lbs 04.8%Aromatic Malt 0.5 lbs 04.8%Special B Malt 0.5 lbs 04.8% 75% eff, 1.033 OGExtract:Assumptions - I use Briess Extract. Their Wheat is 65% wheat 35% barley)Replace Pale Malt and Wheat Malt with:3.5lbs each Wheat LME and Light LME, or 2.25 lbs each of Wheat DME and Light DME. Replace Aromatic Malt with Crystal 20L if you're going to be doing steeping only, if you do partial mash you don't need to change the specialty grains.(Aromatic malt can convert itself, so partial mashers don't need extra base malts)Hops:Centennial .75 oz 60 min (any hop for 34 IBUs if you can't get centennial)Amarillo .50 oz 40 minAmarillo .25 oz 20, 15, 10, 5, flameout, dry hop (2 oz total Amarillo, more at flameout and dry at your choice)Yeast:US-56 (or whatever they call it now), WLP001, 1056A New Start Bitter:All Grain:Pale Malt (2-row) 2.5 lbs 41.7% (replace base malt at your choice)Wheat Malt 2.5 lbs 41.7%CaraWheat 0.5 lbs 08.3%Crystal 20L 0.5 lbs 08.3% 75% eff, 1.033 OGExtract:Replace Pale Malt and Wheat Malt with:3lbs Wheat LME 1lbs Light LME, or 2 lbs Wheat DME 10 oz Light DME. There's something wrong with the OG you have there for the New Start Ale. I make it 1053 for a 5.5 gallon batch. :) I think that 1.5lbs of crystal malts is just too much for a fresh beer for spring if that's what you are after. It also makes it an amber colour, something around 14SRM. I think you could halve those three grains and have a lighter coloured beer which would still have some flavour from those grains. Maybe even a bit less for the Special B.)I'm also not sure what the point of the Amarillo at 40 minutes. It's not going to give any flavour really, just more bittering. Including that and the later flavour additions we're up around 57IBUs which is too high IMO.

I didnt calculate it but I was thinking the same thing for the OG. That much grain will get me much higher than 1.033(not bragging Jimmy James just fact), and move the 40 amarillo up to 30 and make it a hopburst with .5 oz each addition. I have 2# of amarillo on hand so not concerned with usage.

Awesome! I might actually brew this tomorrow. I was also thinking about using less specialty grains, what's everyone think?

I got 1.057. I'm assuming it was a typo and he meant 1.053. Japhmi, can you confirm? Also can we target final gravities? I assume that we're mashing at 150 for an hour? In the barleywine I think I'd replace some of the pale malt with more wheat. Not sure about the names either...the bitter looks like more of a pale ale and the ale looks like a hoppy bitter.Thanks.

Ha s anyone attempted to work up a Parti_Gyle version of this, so as to do the Barleywine and the bitter in one fell swoop?

Well, I brewed this today. Everything went pretty well. I had to make a couple substitutions. I make 10 gallon recipes, so I doubled everything. Stupid me, though, when I was buying ingredients, I only bought 2 oz. of amarillo hops. So, I used a little more centennial, and some simcoe I add to make up for it. I ended up hopping it like this:(remember, 10 gal. batch)60 min. 1.5oz centennial30 min. 0.5oz centennial, 0.5oz amarillo20 min. 0.25oz amarillo, 0.25oz simcoe15 min. 0.25oz amarillo, 0.25oz simcoe10 min. 0.25oz amarillo, 0.25oz simcoe5 min. 0.25oz amarillo, 0.25oz simcoeflame out : 0.5oz amarilloAlso, my lhbs didn't have carawheat, so I used 3/4 lb of cara-pills instead.The brew went great, I mashed in at 152I wound up with 10 gallons, OG: 1.052pitched 2 packets of US-05

Yes, that is a typo, 1.053.As far as mash temps - this is somewhere that I'm lost, to be honest, so what sounds good to you all?

I wasn't following the threads all that closely. What final gravity are we trying to hit? That will help determine the mash temp.

I'd vote for 150. That seems to be a good mash temp for most things I've done so far.

Yeah, I have a ProMash recipe all set to go if someone can tell me the FG that they designed the recipe to.

You're assuming that I thought of such a thing :blush: 1.010 is probably where we're looking at. Sound appropriate?

What does the group say is an acceptable sub for the Carawheat?I ordered up what I could from B#, but they didn't have the Carawheat.I gan get it loca if they have it , but a 30 minute drive for a 1/2 lb of grain is not in my plans.I have Crystal mats, Caramunich, Caraviene, Honey malt.

I'd say crystal 40L.
