Dressing:
.5 c water
1 Tbs rice vinegar
2 Tbs lime juice
2 Tbs sugar
1 thai chile or jalapeno, minced, or 1 to 2 tsp sriracha (optional if serving small kids or midwesterners)
3 cloves garlic, minced
1 Tbs fish sauce
Salad:
1 lb filet mignon or prime rib
2 tomatoes, cut into wedges
2 cucumbers, peeled and sliced
1 small red onion, thinly sliced
1 c cilantro, chopped
2 Tbs mint, chopped
3 Tbs chopped roasted peanuts
Cook the beef, slice it thin, and mix all the ingredients and dress. Serve over bibb lettuce
