Thai grapefruit salad

This one is really good- sour, salty, spicy, minty, and crunchy.  

 

Dressing:  [color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 Tbs freshly squeezed lime juice[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 Tbs fish sauce[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]1 Tbs sugar[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]3 Tbs shredded coconut, toasted in dry skillet for 3-4 minutes until light brown[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 c bite-sized chunks peeled, sectioned grapefruit[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 Tbs dried shrimp, coarsely chopped [/color]

[color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 Tbs coarsely chopped roasted, salted peanuts[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]1 Tbs coarsely chopped shallots[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]2 tsp finely chopped fresh hot green chilies or dried red chili flakes[/color][color=rgb(51,51,51);font-family:Arial, Tahoma, Helvetica, FreeSans, sans-serif;font-size:15px;]1/2 c coarsely chopped fresh mint or cilantro[/color]

It's the dried shrimp, isn't it? You can sub a cup of cooked shrimp. Try it!
