I have a beer on tap right now that was a complete afterthought. I had 2112 up & running in a West Coast Lager and I wasn't sure what else to do with it. I had an old recipe for Abita Amber (which would ordinarily be made with 2308) and I altered it a little bit. It's not really Abita Amber but it's along those lines and this turned out to be a fantastic beer.

6 lbs Rahr Pale Ale Malt
3 lbs Briess Vienna (Denny, I know what you're thinking...)
6 ounces Crystal 120°L
2 ounces Carafa I
4.2 AAU of Tradition pellets for 60 mins
1 oz Hersbrucker pellets 2.8% for 30 mins
Wyeast 2112 California Lager yeast

OG: 1.050, FG: 1.012, IBU: 28, SRM: 10, ABV: 4.8%

25% distilled water, mashed at 150.7° for 60 mins. Water leaned towards the "chloride" side... chloride 51, sulfate 28. It has a hint of roasted flavor from the carafa but very little. If that bothered you there are any number of things to sub with including debittered black malt, Blackprinz or Midnight Wheat (or just forget it altogether). Turned out to be a very nice beer and a fly-by-the-seat-of-my-pants recipe. A pic...
