What happens when you brew an ale and let it ferment at room temp, when room temp is like 85 degrees? It won't be good, but how bad will it be? That is something I am actually interested in.So, to that end, Imma brew an IPA with a buddy today and just let the yeast go to town at room temp.Just off the top of my head.12# or so maris otter1# or so of munich1# or so of c-60Prolly bitter with chinook and finish with cascade. We'll see what is in the hop locker.Ferment with Chico yeast at ambient.Shooting for like 17 plato starting gravity and about 70-80 Bus.Gotta refine the recipe and get to it.Just for shits and giggles this one is.BrewBasser

Looks like an interesting experiment to me Basser. I will be interested to hear what you discover and observe from the chico yeast at that temp. The yeast is so clean when temp is controlled so this will be interesting. Malt and hops bill sounds good as well. Good Luck hope your friend enjoys the experiment as well.

Are you going to record the beer temp during the ferment?

You might be giggling until your head is pounding, but you know that already. Do you have a lab at work that could tell you how much fusels were produced? I hope you're making this a small batch.

I just did an MLPA, only had a tub big enough to put 1 fermentor in with ice to control temps, the other one sat on the counter at about 78 ambient temp. I am looking forward to tasting the 2 side by side to see what the actual difference will be.
