Agree fully re/ Simpson's Golden Promise.....in fact I have not bought any Marris Otter in years.....use Golden Promise in ESB, and the house special we call HopScotch (simply the JPA recipe brewed with Golden Promise and fermented on a good pitch of WLP028).....usually do a series on 028 (ESB, then Wee Heavy, then HopScotch) and burn through a lot of Golden Promise. Ferment them all at 55F, and slowly ramp the temp into the high 60's toward the end of fermentation.
I usually don't have the patience to go down to a pint and end up with more like a qt. Also, I've made it with several different types of malt, but without question it's far best with Golden Promise.

Just one gallon to a pint. I boil until I'm scared. It will get syrupy and foamy and try to boilover. That's when I stop.Excellent recipe.....I like the boil down of the first runnings, but will confess that I have never approached a 16:1 boil down (2 gallons to a pint).....perhaps I am chicken, but I am worried about burning and scorching....do you ever have an "issue"???
