I have a rye saison with brett that I really want to get made this week and I am not going to be super comfortable doing so without nailing down the issue.

You're making the right decision here. This beer sounds fantastic and I wouldn't take any chances with it. Hope you get to the bottom of it. Once you think you have the answer, you may need to brew another sacrificial batch just to make sure everything is copacetic.

I don't think so. I just got it and the guy I bought it from got it a couple days before he sold it to me.

check your mill gap, just to be sure it didn't loosen

I thought of this after yesterday and checked to crush today... Everything was cracked without the husks getting too beat up. I will definitely try to tighten it up for the sacrificial batch. I have a bunch of honey, maybe I will make a braggot if the gravity still blows.

Well I am mashed in for my sacrificial batch. Doing a simple American honey wheat. 10# CMC Pale, 6# Franco Belge Wheat, 3# Orange Blossom. Hops are all Citra. 2 oz FWH, 2 oz 10 mins, 2 oz 5 mins. I closed up the gap on my mill a bit. It definitely felt like it running it through on the drill. Crush was much finer than before. I am crossing my fingers here.

I had a similar problem, but my mill didn't change, the size of the new grain I was using did. Next batch check the crush to see if it looks the same. Maybe this grain is slightly smaller and not getting milled as well, in that case change the mill gap.

I was thinking of that today as I was adjusting the gap. If this is the culprit, I will keep an eye on it when I change grains. For the last many years I had been using Franco Belge pils or pale or sometimes Thomas Fawcett. The strange thing is that I did a DIPA with the CMC and I had no issues. We will find out in a few minutes if this helped.

Well bros... Looks like we may have found the culprit! :frank: :frank: :frank: The sample is still a bit warm, but it is reading 1.054 and target was 1.052.

Nice! I really need to get a mill. I've been getting my grain from Brewmasters Warehouse and have always good luck and constant 80% effiency. But these past weekend brews were 72% and 74%, not bad still but would like to consistent.

Yeah, recalculating hop utilization on the fly sucks. Too many other thing to do. Like drink beer.
