Dang, I REALLY need to start harvesting yeast and re-pitching it. I have only used a newly bought vial every time. No, we monitor the yeast carefully, and as long as it's performing normally, tastes good (we taste the yeast every time we harvest) and makes good beer, we keep using it. It's all about timing, really -- we don't store the yeast. We harvest and pitch within minutes, and within minutes of that, the wort is pumped over. If we started storing the yeast, we probably wouldn't feel quite as confident about going to 20.
