Tony, check out the Oktoberfest Lager on my site (link below). Go to recipes and it's towards the bottom. I like that beer with 2124, but my assumption is that SA uses Wyeast 2206 Bavarian Lager yeast which has a distinctively malty profile to it and immediately fills your brain with oompah-music. I also like the one-hop-addition method so the beer has good hop presence but a big, malty finish. I'm making mine next week. Cheers!Ps. About your sig... yes, I have wondered that about my $1 bills. Have you ever wondered if stripper's butts smell like metal poles? :P

Well, I don't have SA's recipe but I do have Gordon Biersch's. IMO the GB recipe is a good one and it is something like this: 65% continental pilsener malt 25% German Munich malt (8L) 10% Caramunich 27 IBU Hallertaur Mittelfruh (single 60 min addition) WLP820 If you make an even 10 lb grist with the above proportions in a 5.5 gallon batch the OG should come out about 1.051 assuming 75% efficiency. You can adjust from there.

Yep, pretty similar. The main difference I see is your 15 minute hop addition. The first o-fest I made had a 15 minute addition and I felt like it almost ruined the beer. Obviously different strokes and all and I'm glad yours turned out the way you wanted it to. However, I'd caution those who like a very malty festbier to be very careful with late (15 minutes or less) hop additions.

I agree. I like the 60-minute-only approach for an Oktober. I have every confidence in recipes posted by BryanH so I'm sure that the 60-45-30 approach is lovely too. Cheers.

A good point - with the extreme malt I didn't notice much hop presence but I'll have to pay more attention when it's back on tap. Does anyone use any FWH for their Oktoberfests?
