how long for a starter to finish up?

That sounds like a solid procedure. Next time you make one, check out OG and FG of the starter. I bet it is not as low as you might expect.

I actually check the FG occasionally and it's usually around 1.010 or lower. does this indicate my stir plate isn't "stirring" enough? I have it going such that there is a little indentation in the middle of the surface.

Hmmm... IDK. I may seem like a yeast expert but I didnt even stay at a Holiday Inn last night.

If you want to step it up, just add it directly the the flask on the plate after 2 or 3 days.

The problem with adding without decanting 1st is that I'll then have a completely full (5l) flask so, no headspace for O2 pickup even on the stir-plate.Didn't mean to come back like a dick, sorry.Beach

I had not thought of this. I think though with the yeast all in suspension it shouldn't be a problem if you have the space. If you are building up something that big, gotta take it off I suppose. Although it wouldn't be out of hand to brew up a batch to grow extra yeast. A 5 gal batch of dry stout would surely give you plenty to pitch from.
