I'm wanting to brew 10 gal batch of hefe but only can do 5 gal ata time due to brew pot size. is it feasable to mash a 1.100 and split it into two 5gal primaries and bring each one up to 5 gal. at 1.050 ?

I don't see why not, but you will have to add more hops. The density of the wort will not dissolve as many IBUs, therefore you have to use more hops. Any brewing software should give you an idea of how much.

Probably good to do something like this on a Hefe batch that doesn't rely on the hops so much.
