Someone give me some 1272 ideas...

I popped a fresh Activator of 1272 yesterday and it's swollen already. I plan to make a starter on Monday and put it on the stirplate and then brew early on Tuesday morning. My orignal thought was SIGNATURE ALE but now I'm thinking of something lighter first and then the Signature Ale. I have never brewed with this strain before so what could I make with it? American Wheat? Cream Ale? Blonde? Wimpy Pale Ale or Amber Ale? Cheers Beerheads!

If you like Rye. :) 1272 is pretty wide open. Any Ale with a hair extra ester will work. I like your ideas. Pick one.

I'll have to check my notes. In the recipe forum = search fail. Basically an Am Wheat, but rye, I usually will use 1010, 1272 would be fine.

I really just enjoy this yeast. I'll use it in anything I'd use 1056 or the like in other than something that requires the yeast to be REALLY clean ester-wise. I've used it in MLPA before and I enjoyed it a lot.

I would suggest some 2 row, some crystal 60L maybe a dash of wheat and well... just call me crazy but maybe some Mt. Hoods! ;)I have a brown in the primary sitting on 1272.. that'd be my second choice :P

I was actually thinking of making an MLPA with it and also my Bases Loaded Blonde... both of which use 1056/WLP001. I don't happen to have rye, special roast or Cascades so the Rye Ale may not be feasible unless I make to to one of the LHBS in which case DJ's or JB's recipe could work. Thanks gang!

It'll make a nice Am Wheat too. Even one on steroids like all mine are...........

For what its worth Ken...my simple but effective Rye pale:12 lbs Pale Malt (2 Row) UK (3.0 SRM) Grain 80.00 % 3 lbs Rye Malt (Briess) (3.7 SRM) Grain 20.00 % 1.25 oz Centennial [8.70 %] (60 min) (First Wort Hops 31.2 IBU Kind of a bigger beer at 1.066 approx. I did FWH this one and its good so far. Still in primary though. The UK pale is the key to this beer, nice and toasty. Use your favorite hops in place of Cents if you like. Make sure you hop accordingly to the gravity. As always I kept it simple. ;)

Hey, yeah! A red would be good and I haven't made one in awhile. I have some 830 and I was thinking red lager but maybe I'll do a red ale instead. Maybe Signature Ale, MLPA, Red Ale, Blonde Ale but not necessarily in that order. So wait, did you use C60 and C120 or C120 and Special B? Special B is the best way to get that RED. Cheers.

I'm gonna make an "American Bitter" with the White Labs equivalent (or maybe it's an American Pale Ale, but Bitter sounded cooler).
