Any ideas??? Decided to throw a batch on top my yeast cake I will be bottling today and its a scottish ale yeast..so wanting to do a similar the only prob is that I have no crystal. I have a bunch of other stuff to use..Or if you have a really good scottish ale recipe for all grain and no crystal..send it my way quick

How about using some Caramunich or Caravienne. I have seen some recipes that dont include Crystal malts too for Scottish ales. Just my $0.02.

Go with the Honey malt then, use it in a small amount 8oz. Honey malt is like crystal malt but it adds some honey flavor. I have brewed with it before a few times, not sure the honey flavor is strong but I think in a small amount it will stand in for the crystal and you probably won't percieve the honey if you are going for a malty Scottish.

I think this is probably what I would do as well given the options listed.

You could boil one gallon of first runnings down to a syrup for a caramel flavor and body. That's what I do for my Wee Heavy.

Because he doesn't have any crystal. That's the whole problem.

There really isn't a substitute for a crystal/caramel malt. But since you're brewing a Scottish Ale, I would say you just need Pale malt and some Roasted Barley.

That's not a bad idea either. I've never thought to try something like this!

I did this with a Scottish Heavy last year. Didn't replace the crystal with it but it was a nice technique and it made a nice addition.
