I do not "clone" beers very often, prefering instead to brew to a style. But I rarely consult BJPC. Rather, I look for inspiriation for a particular style from commercial brews I enjoy. And occassionally I'll make something that sounds interesting but doen't necessarily have a style or commercial example.I have also been tiptoeing towards opening my own brewpub. Consequently, alot of my recent brewing has been to nail down recipes for beers I want to offer.

beer is ok. Although I prefer something way dryer, astringent and flat, like wine and mead.

I'm wondering why you brew professionally if you prefer another drink, and why you wouldn't produce that drink professionally.Just curious.BrewBasser

sorry, the sarcasm didn't come through. I know a professional brewer who admitted to believing that wine and mead superior beverages. Crazy! I don't wanna be one of those beer guys who knocks wine, but even the best wines to me are good but no I don't need another glass.

I try to brew to style, but if I miss it and come up with something good, I'm a happy man.Nate
