I will be racking to a lot of glass secondaries this Sunday if my third reading tomorrow is the same.I modified Hightest's SNA based on different locally available products and achieved a total fermentation time of 18 days at a low temperature of average 60 Degrees using US-56.Details are as follows,Original Gravity: 1.098Final Gravity: 1.016Initial Gravity (Brix): 23.31° B RDSFinal Gravity (Brix): 4.08° B RDSReal Extract: 7.55° B RDSApparent Attenuation: 82.5%Real Attenuation: 67.6%Alcohol By Volume (ABV): 10.9%Alcohol By Weight (ABW): 8.5%Joules per 350mL: 940Big honey aroma and flavour, ultra clean fermentation, perfectly drinkable as is from the primary fermenter with no fusels. At low temperatures it kept on trucking and had krausen that would make a beer brewer jealous.Now what to do with one hell of a lot of Mead :)Cheers,Brewer Pete
