And mint syrup for mojitos/julepsETA: This thread has provided an answer to a meadmaking problem I've been having. Reproducing "Nectar of the Hops" without boiling the honey. Just boil water with hops, duh! :cheers:

If you want bitterness along with the hop flavor, add some DME to the boil water or find some other way to lower the pH. If you just want the hop oils, proceed.
