The Baltic Porter I brewed today came on at 1.084 OG for 11 gal in the fermenter. Mr. Malty says I'm still OK. Expected 1.078 at best....... I set the Jamil's calculator at 4B/ml and 25% non-yeast. Had a really compacted 200+ ml of pretty nice yeast that had been settling at 38df since last Friday. Guess I'm OK but I haven't done one this big for a while and am a little concerned about the increased gravity. I've had enough stuck fermentations to last me forever and don't want this to stick. My only option is to throw a pack of US-05 in which I'm not to wild about. Used 2112 slurry for this. ??? eta - yup, aerated the hell out of it with a drill and SS stirrer.

Give it a shot or two of yeast nutrients and call it a day. You're looking at a less then 10 point difference you should be fine.

\17.8 Brix preboil - with a two hour boil planned (kettle malliards FTW). A little late at that point to come up with more yeast since it was in the kettle. Used tastybrews calc and punched in Am light Munich yesterday before I weighed and milled. Well, went to the sacks and had Gr. Munich - better yield. Figured it was a wash with the efficiency I planned. Plus my mash/lauter efficiency went wild??? Guess I'll take a look in the morning and see if the blow off bucket is chugging. Hopefully it will be......... Oh, and decided to dump in an extra pound of malted wheat yesterday too. Why? duh................ Guess you ran out of kettle space to dilute preboil. You would get more beer at your desired OG that way. But no room is no room. Suppose diluting post boil would work to like the old extract day if you had fermenter space.

The OG was fine with me even though it was high. IBUs aren't really a big deal for me with this one so I went with it, even though they probably took a hit with the extra gravity/break material. It's starting to chug through it........Posted Image

It's down to 1.024. Not bad. I think I'll keg it later this week give it a D-rest, start lagering and carbing next week and call it good.Yeah, I actually took a post ferment gravity again............
