Made some Pale Ale today, next week is Oktoberfest, Pale Ale, Pumpkin Ale, Saison, Hefe, Kolsch and our spiced dunkelweizen thingy.

Drew - when's the Pumpkin Ale due out?

Cool DJ, glad I was able to help out in some way and I would love to be near you to try the Sticke. I haven't brewed a Sticke' for a looooong time, and the opportunity to use the yeast from a D.Alt I brewed two weeks ago was too hard to pass up. I have three Alt's on tap right now, 2 Dussels and 1 Northern German, so a Sticke' finally seemed necessary. The Dussels on tap were fermeneted with 1007 and K97; the 1007 is cleaner and crisper, but the K97 batch is still really good and I'll use it again.Enjoy the Sticke!Phil

Didn't wait long, damn sneaky beer too, IIRC from the last bout with it. I think about half the time a Sticke finishes the 1007 run here. It just seems natural. A fun one to have 10 gallons around to get into every so often. I think this was one I backed of the melanoidin, sparged a bunch and boiled for 2+ hours just for fun. It's unbelievable, but on Saturday (or possibly Sunday) I will actually brew a beer on the weekend and possibly in the afternoon/evening. I have been brewing early in the morning on weekdays (I work at home a lot and my schedule can be flexible) so it doesn't interfere with our weekend plans. We are leaving for a fishing trip this weekend but my wife is leaving Saturday morning and I am not leaving until Monday because two of my kids have baseball & softball tryouts. MLPA will be brewed on Saturday if all goes right. I have been brewing since September of 1999 and have never brewed on the weekend or started after 6 or 7am. That means I've never drank beer while I have brewed. Should be awesome! Cheers!

Congrats Ken!! Thats pretty cool in all honesty. I sure hope you enjoy your experience brewing in the evening this go around. My kids are both 4 and all I know is weekend brewing. I could never brew in the early am on a weekday (work) but adopted the 7pm mash in a couple years ago. I have been brewing friday afternoons after picking up my kids and coming home to brew since my wife works later than me too. Thats worked good too, tonight it was a Smoked American Rye. Hey if you have never had a beer in the early am try brewing a Schwarzbier. I have drank that in my coffee cup even on a 5am mash in too. I bought a few packets of dry yeast the other day. What do you all think would be better for an Irish ale... Nottingham? ... or Windsor?I'm leaning towards Windsor.Jim

I did my double brew day yesterday. I was high on volume for both, and low on gravity. I'm not too worried about it though, it will still be beer!

I made MLPA on Saturday afternoon while drinking my English Lager. It was a beautiful, sunny afternoon and it was really nice to be able to make a beer on the weekend, have a few beers, turn on the music, make as much noise as I like, etc. I'm usually starting at 6am on a weekday, drinking coffee & being quiet because my kids are still sleeping! The beer is in primary now bubbling away and smells heavenly. Cheers!

brewing my DFH 90 right now. Just made my 2nd of what will be 12 hop additions all spaced 7.5 minutes apart. Good thing I don't mind the view from my porch!

Getting ready to sparge the Scarlet Pumpernickel and setting up a brewing session for a Hop Hammer at some point in the future. 3 oz. of Magnum and 3 oz. of Chinook just for bittering. :blush:

I'll be brewing a Sticke' Alt on Sunday. I have to transfer a Dusseldorf Alt tomorrow to collect the yeast, Wyeast 1007, to use in the Sticke'.-K90

Well, the Sticke went very well, hit the numbers and pitched the 1007 slurry at 2:30; even though I'm fermenting cool, 58-60', I hooked up a 1" blow-off to be safe. Just before 6:00 I checked on it and it's kicking out bubbles every 10 seconds. It's been a while since I harvested and used yeast from a previous batch, but I don't remember it starting up that fast! The sample tasted great and I shot for a bitterness ratio in Beersmith of 1.5. This one is looking to be a malt/hop bomb!-K90

Probably on tap here next weekend, but I can't promise that.We should be bottling some next week.
