I'd use the dry yeast. Wrap the pack in foil then in a ziplock. Should be fine. Or toss out the rest. Its a year old and s-04 can be had for less that $2 a pack

True. I'll just look at it as a #2 insurance policy to make sure my beer carbs up.

one last concern - do I need to be worried about the s-04 yeast imparting any noticeable characteristics to this beer or will the fermentation be so small that it doesn't matter?

Yeah, I think it's such a small percentage of fermentation compared to the primary that you wouldn't have to worry about it adding any flavor at all. I think a few commercial breweries ferment with one strain and then prime with another and I think it's all good. But...If I were you, I wouldn't worry about adding any additional yeast. 2¢.

I hear you ken - I'm just thinking about how pissed I'd be if my bottles didn't carb up.

We could keep whispering like this all day, but I still say you will be just fine. Either way, you will be good. Good luck with the beer... cheers & happy Saturday to you.

Yea, I used to never care about re-yeasting...until it happened. I had a Bourbon Oak Aged Russian Imperial Stout that I bottled over a year ago. Still nothing. After I pour the flat beer, I can see that the bottom of the bottle is completely clear, no sediment. It wasn't even in secondary for that long either. If I were you, I would re-yeast with the 04 and call it a day...It's not going to hurt at all.

If I'm going to reyeast anyway I guess if I don't get to bottling tomorrow it's no big deal then, eh?

So I'm thinking there is probably a 90% chance I would have been okay without adding a little bit of rehydrated S-04. I looked this morning (about 24 hours after bottling) and I can see a fair amount of stuff settling in the bottom of the bottle. I'm hoping this stuff will pack down nice and tight after some extended aging. I hate having to be super careful when pouring out my bottle conditioned beers.
