Well, do ya?

I don't, and my bottle conditioned beers come out carbonated and crystal clear.

Not everyone is so lucky as to not have to contend with the dreaded chill haze!

I contended with it, and then I fixed the problems with a strong boil, quick chill, and long secondary at serving temperature.

I do the first two as best I can (boil hard, chill with an IC + ice bath) and the third I've certainly done but sometimes chill haze still persists.

Well as it has been discussed time and time again gel tends to work a little bit on chill haze but mostly on suspended yeast. Like just yesterday I racked a kolsch into the 2ndary. I used wyeast 1007 which does not floc very well at all, this is when the gel is quite handy. For haze I think it's the proper boil, chill, etc procedures that will get you closest to where you want it. I find a whirlpool and a proper rest after chilling is the biggest factor if my beers have chill haze or not. But if the question is, will I have enough yeast to bottle carb if I use gel, then the answer is yes.
