Good suggestions on the not fully carbed/carbed effect on a beer. When fully carbed I do think it multiplies the flavors and aroma. I also think if its too cold it tends to mask some of the flavors so maybe waiting a bit let it warm up might have a good effect too.

I second the carbonation aspect. Wait until the beer is fully carb'd then judge it.

Thanks for the responses guys. I upped the pressure on the Co2 so it would carb up a little better, I had it set lower than normal for carbing. I'll give it a shot on friday and see how it is and go from there.

Well it pretty well carbed and although it's better and drinkable, it's still pretty blah as far as hoppiness.Seriously thinking about adding another ounce of dry hops just to see what happens...Cant make up my mind...

Go for it, it can't hurt. If its not hoppy enough you need more hops.

No, we have hard water. I do use an under sink cold water filter though but it doesnt soften the water, just removes the clorine taste and smell among other things.

A lot of Bicarbonate and Chloride, maybe? That can lead to a loss of crispness and an accentuation of malt flavors over hops.

Interesting, I've never had ths problem before but now you have me wondering. I'll have to go get some water from the store and brew the same recipe and see what i come up with. Now does the board recomend:filtered drinking water or RO water for brewing if bought from the store?

reverse osmosis water is more pure than distilled water if I remember right....which = no salts/minerals
