Whats a good beer to brew.....

Ok, so supposedly its going to warm up around here pretty soon. Well, in the next month or so anyway. My spare room is my fermentation room. Most of the year I can keep the temp where ever i want it, but in the summer it gets pretty warm in there. It can get in the mid to upper 80's in there. What kinds of beers can I brew during the summer that will be ok to ferment at such high temps? Any info and/or recipes would be greatly appreciated.

thats easySaisonit's best fermented up in the 80's IIRC.

I would guess Fusel Headache Ale would be a good one. I'll just chime in first mentioning the swamp cooler method to control fermentation temps. You should be able to do searches and read all about it. Basically get a large bucket, partially fill with water and add 1 liter frozen water bottles as needed.

just make sure you like Saison first as they aren't to everyone's liking.

with the high temps mentioned a combination of both methods might be prudent, personally of the 2 I usually use the tub and ice bottle method.

Swamp cooler and evaporation are the less expensive way to go, but then again you could always get a chest freezer & Johnson control if possible then you can make anything you want. Even lagers...

Dupont is the saison that is typically fermented at the really high temps. The yeast is is white labs 565 or wyeast 3274. Most Saison yeasts like to be in the 70s. Dupont gets all the tropical fruits and spiciness from the yeast.

I've only tried DuPont, it's a decent beer, but not something I'd want to drink every day. There are a lot of fans of Saison on this board though, perhaps some of them can give you better pointers.

New Belgium Biere de Mars is another widely available and different interpretation.

North Coast Merlin and Hennepin are some others. I love saisons and they are fun to brew since they are pretty wide open style-wise. Saison Dupont is the classic, pretty damn amazing beer. I like to start it in the low 70s but let it rip at the end, you will get a lot of interesting spicy phenolics and a very, very dry beer if you mash low. Good luck!
