It's always nice to know your water profile before you go crazy. I sent a sample of mine to Ward Labs in Nebraska and I know that I have relatively hard water, slightly low calcium and higher than normal carbonates. Yes, it's as easy as mixing your mash water 50/50 distilled and tap and doing the same in the sparge water. Any time I go to the grocery store, I pick up a few gallons of distilled water so I have it around. I think you'll notice a smoother profile to the beer and it's a no-brainer to do. The only time I could see it being an issue is if you already had ultra-soft water to begin with. Cheers.
