The yeast of choice is WY1450. It will become available full time in Feb. if you can't find it now. After that, the order would be 1272, 1056, US-05. I really prefer 1272 to 1056, but if you can find 1450 it's the best choice.

I would say use the US-05 for this one.save the pac-man for a IIpa or Imp.Stout.the 1272 would be my first choice.Just picked up the grains to brew Denny's Rye IPA. Unfortunately they didn't have Wyeast 1272 - or Wyeast 1056 (and definitely not Wyeast1450 - although I asked the LHBS to order one for me on the next order). They did however have some Wyeast PacMan yeast. The profile says that it is a high floccing clean yeast with a slightly fruity profile. I also picked up some US05 dry yeast as I know this is a kind of last resort on this recipe as it dries it out a bit much.So - use the Pacman - or the 05?

I am currently have this recipe (minus 1 pound of rye because they only had 2 pounds available) that was fermented with the US-05. I am VERY happy with the results. You will be too!I would say use the US-05 for this one.save the pac-man for a IIpa or Imp.Stout.the 1272 would be my first choice.

Awesome! I was kind of leaning that way and hearing you confirm it makes me feel better. I should have some 1450 in a couple of weeks and since I can only brew 5 gallons at a time (grain bill too big for 10 gallons!) I'll probably be brewing it again within a month or two.I say use the Pacman. That will be closer to 1450 than the 05 would be.
