I want to use some WYeast Kolsch yeast I've had in a smack pack for a couple of months. I'm going to partake in a rare weeknight brew session one night this week and am planning on brewing a blonde ale. My recipe calls for 2-row, honey, and Crystal 10L malts. Wanting to using this Kolsch yeast...thoughts, concerns, experiences?Thanks all!

Great yeast. Ferment it low (high 50s) for a cleaner profile, warmer for a slightly fruitier profile. I have used it for things other than Kolsch and it's very nice. Was that "honey" or "honey malt"? Doesn't really matter either way, the 2565 will make a great beer. Cheers.

Hey Ken....I figured it would turn out good, just wanted to hear it from someone else. Sorry, honey malt...4 oz of it.This will be my first fermentation using your tub/water bottles method. Pretty excited to watch what happens...

The last I heard WL029 is still the house yeast at O'Fallon. So, obviously it can be used in a variety of beers successfully. Have fun with it.

I uesd 2565 last year for a blonde ale recipe. I fermented around 58 degrees and it turned out lovely. I say give it a go for sure.
