I brewed a batch of Quiet Storm Stout about a month ago. I had to sub WL005 British Ale yeast instead of Irish, but the rest was pretty true to the recipe. It went from 1.062 down to 1.020 as expected. It spent 3 weeks in primary, and then I kegged it a week ago. When does this beer peak? I pulled a pint tonight, an it was very good, but still a bit rough around the edges. I've brewed it before but I can't remember how long I aged it. Any ideas?

so far I find it keeps getting smoother. I think it's around 3 months for me at this point.
