I’m interested in brewing a traditional Irish Stout. Anyone have an all grain recipe?

Dry Stout. Do this with either WLP001/1056/US-05 or 1084 irish ale. I used to do it with the latter all the time but now I like the attenuation of the US-05 in drying it out. This is like a murphy's or guinness "style" stout. To be honest, I like this one better than either of those famous commercial examples. :( EDIT: The recipe got tweaked somewhere in page 2, here's the current build for convenience: 6 lb 2-Row or Marris Otter 1.1 lb Roasted Barley 2.2 lb Flaked Barley 15 AAUs EKG @ 60 (note this is about TWICE the hops as the first incarnation - believe me it works) US-05 or 1056.

I'm with earthtone. That's the only way to go to make a dry stout. I'm going to experiment with yeast on my next batch. Gonna try the British Ale II from WYeast. I have been using as my house yeast and it can attenuate somewhere between 75-80% and is fairly clean at 66ºF.

Make sure you get the 500 lovibond roasted barley. The 300 lovibond roasted barley common from some American maltsters won't cut it. You won't get the right flavors or color for this beer.

D'oh! I wish I would have read this before I bought the ingredients for earthtone's stout recipe. I bought Briess Roasted Barley which I'm pretty sure is 300L.Oh well.
