I brewed a 10 gallon batch of a Belgian tripel last Saturday and split it between two fermenters. In one, I used Wyeast 3787 and in the other I used Wyeast 3864 (VSS release last quarter). I was concerned about the 3864 today...it looked like it had quit fermenting. So I took a reading tonight and it's down to 1.011 after 5 days from 1.083 :) I couldn't believe it fermented that low so quickly. Anyone have have any experience with this yeast? Does it always ferment that quickly?BTW...the sample was good for something 5 days old...it needs some aging, but I think it is going to be good.
