Santa Fe Soup...

My sister had a version of this and I am making a version I found online for dinner tonight.

2 lbs ground beef
1 yellow onion - chopped
Salt and Pepper to taste
1/2 teaspoon Cumin
1 can Pinto Beans
1 can Black Beans
1 can Kidney Beans
1 can chopped green chilis
2 cans shoepeg corn - or sweet white corn
1 can rotel
1 package taco seasoning
1 package ranch dressing mix
2 cups of water
Lime wedge for garnish
Shredded cheese for garnish
Avocado sliced for garnish

Brown the ground beef and drain it if necessary. Add everything else, stir, bring to a boil and let it simmer about 20 minutes.

My version.  I went with sour cream and green onions because... sour cream and green onions.  ;)

My mother-in-law makes what kind of a taco soup that is almost exactly like what you're talking about here. The main difference is that she uses cubed chuck roast instead. Other than that they appear to be relatively similar. It's great stuff.

Yeah, my sister will make a beef version and one with ground chicken too.  I could see just about anything being used in there.  It's very chili-like as opposed to "soup"-like but it has beans in it.  It's a loophole for adding beans to something chili-like.  A workaround.  No one can call me out because it's not chili.  It's Santa Fe Soup.  :lol:
