Backstory, we have a floating cabin  (imagine a shed that actually floats on the lake, semi-permanently).    I had the idea of brewing a batch of beer with lake water and fermenting it on the lake.   I know temps will be high.

Do any of you have a suggestion on a simple ale and yeast that likes to ferment at a higher temp?   The only temperature control that I can do is putting the vessel in a tub of water and putting a tshirt over it.   I can point a fan at it that is run by a fan with a solar panel.  Otherwise, I'm not going to drain my solar system to attempt to cool this.

Odds are I will make something that tastes like crap.  But it will be a fun experiment.

That would be my choice as well.

What temp is the lake? You could float the fermenter in the lake and it'll be whatever the lake temp is.

Bonus points if  you ferment in a weather balloon! No airlock so as it ferments it gets bigger :)

How else would it float in the lake!
