what's your top two favorite hops when brewing SMaSH beers?

Yes, I realize 1 hop varietal goes into a smash brew....but what are your two favorite hops (ranked 1 & 2) if you were going to brew two different smash brews?

galaxy def stands really well on it's own...

 

maybe simcoe for 2?  not sure as I rarely only use 1 hop at a time in a hop forward beer.

 

if we are talking in general saaz for a bopils def works :D

Vic Secret and Simcoe for hoppy beers.

 

Hallertau and Sterling for lagers

Centennial I would say. Though a past favorite, and still good, Simcoe is way different than it was 15 years ago. Way more catty.

I miss the old piney Simcoe. That was my favorite.

Picking time or natural evolution maybe.

I'm pretty sure hops (the way humans propagate them) are essentially clones.  I'm sure there are plenty of factors that affect flavor but was it on purpose or is it out of our control?  maybe people like catty better now???
