2 New Pressurized Fermenters

After my infection scare, I bought 2 new fermenters, both are pressure capable. First I got the Fermzilla All-Rounder, then a week later, I got the Topedo 6 gallon corny. The All-Rounder is currently in use and I just fitted a floating diptube to the Torpedo.

How many gallons on the all rounder?

Plenty of headspace in the AR. I haven't played around with the 6g Torpedo yet. Reviews say a full 5 gallon batch is no problem in the 6.1 gallons keg. I will use Fermcap, tho. I also picked up some magnets to try out with dry hopping.

What advantages have you found to pressurized fermentation?

Mainly for lagers. I don't have temp control. Also, it's nice to fully or partially carbonate while fermenting.

Guess I don't see what temp control has to do with it.  I ask because I had a long conversation about it with Chris White after seeing a presentation he did.  That convinced me that it wasn't for me.

I enjoy saving a little CO2 and the beer is ready to try right out of the gate.

I was under the impression that pressure allows you to ferment lagers at warm temperature. It seems to be working for me.

I've heard that as well. No proof or anything from my end.

You do not have to pressure ferment to spund.  You can put that on close to the end and still get enough carbonation.

I was thinking of using it for both.  

 

Since switching to the Spike CF5 I leverage the cooling coil for temp control.  It's awesome but I don't have a great system for cooling the chilling water I circulate through it (yet) so was thinking of experimenting with pressurized fermentations to see if I could still get good results on my lagers without having to actively cool as much.

That's mostly what I do. I run at a low pressure (5psi) towards the end and crank it up at signs of outgassing slowing down so I don't miss my chance to carbonate.
