Extract vs. AG, who's done the comparison?

I too love your recipe Denny, it is one of my all-time favorites!! But I too have "tweaked" it. I cannot say mine is any better just different. Sometimes I will use your recipe as a general guide and sub ingredients that I have on hand. Certainly it isn't your recipe but it makes for some great beer.

no offense but:boooooooooo - not a real comparison.

A. OF & I agreed.B. The six folks we had judging thought so.C. OF had one more point than I on the final scores.So I guess it's case closed.

I'm not saying you both didn't make great beer it's just not really extract vs AG. I can easily see the mini-mash filling in where extract may be lacking.

I'm in a little late but then doing extract I had a pale ale that was well liked and I made it often.6 lb DME1/2 lb crystal1/2 lb biscuitcentennial bittering and cascade flavor and aroma hopsI made all grain using 2 row for the extract. I got the same 1.052 SG but the extract always finished over 1.020 while the all grain finished around 1.014. I thought the taste was similar and I liked both. All of my extract batches finished at 1.020 or higher even with full volume boil or late addition method. I finally started subing some sugar for some of the extract usually a pound or so to get the FG down. I've done a couple extract batches since when time was a constraint and am happy with it.

JK, I brewed extract + steeping grains for over 10 years then went AG something like 3 years ago. As a result I converted several of my favorite extract recipes to AG. For my ESBs, Cali Common, Weissbier, IPA and APA recipes I converted over there's really no difference other than subtle changes in color. I always had bulk, fresh, light liquid extract from a local supplier with high turnover and so it was ideal as far as brewing with extract goes, never from a can.

Sounds like people have had pretty good results. It's not surprising, but now I have to figure out the problem with my Mild.

My neighbor and I are in the middle of just such an experiment right now. We both brewed an 80/- and did it as close as possible to one another. We brewed the same day, used the same recipe (only diff was his hops might be SLIGHTLY different, but in an 80/- that should be minor), we pitched the same yeast, aerated the same, and fermented them side-by-side in my fermentation cabinet. We will be evaluating the results this weekend at our club meeting.

Oh, OK Zym, now I get your point. You are quite right. Technically it was an AG vs. intermediate brew comparison.Just don't let OF know he hasn't been doing extract brewing for some time. He was a bit bummed when I told him at over 50% sugars from grains he's just doing a boosted AG brew.

How was he accomplishing his mash? did he have a small mash tun or was he doing something else?

I think he was doing stovetop in a large bag and draining it. Not really sure.

I'm not quite sure what it is, but as an extract brewer my Mild has been the only beer that I've made that's simply "okay." Took a while to get through it, and Milds don't really age. It's something I'd like to try again via tweaking the recipe or waiting until I get my AG setup to try again.

Don't know about OF's reasons but I have several reasons for doing AG boosted with extract. One is boiling capacity, since I boil on the kitchen stove. I can use 2 pots and boil 5 gallons but I can't boil 7 gallons down to 5 to get a higher gravity beer. But I can make 5 gallons of wort and bump it up with DME no problem. Another reason is chilling. I live in an area with low ambient temps and very cool groundwater, so I can get away with cooling in the laundry room sink since I'm usually cooling only about 4 gallons and adding 1 gallon of chilled water to get to 5 gallons. The last reason is that I don't have to get all worked up about hitting numbers. I just add enough DME to get the SG where I want it to be.p.s. The reason I don't boil outdoors or buy a chiller is not that I'm cheap. I just don't want to accumulate any more crap than I already have and doing mashes with 9-10 lbs of grains gives me all the control over my beer that I want.
