Creamed Chipped Beef

Creamed Chipped Beef

 

20oz. dried beef

3c. boiling water

1/2c. minced shallot

1c. butter

1c. flour

4c. chicken stock

3c. heavy cream

4t. dijon mustard

1t. ground ginger

1/2c dry sherry

1/4-1/2t. tobasco

 

1.    Place beef in boiling water in a bowl for 5 minutes. Drain and chop.

2.    Saute shallots in butter over medium heat, stirring frequently until golden; about 5 minutes.

3.    Stir in flour and cook while stirring for 2 minutes. Add broth gradually. Cook stirring constantly until thick; about 3 minutes; reduce heat.

4.    Stir in beef, cream, mustard, ginger, and red pepper sauce. Cook and stir over low heat until smooth, about 2 minutes. Stir in sherry.

5.    Add water if a thinner consistency is desired.

6.    Serve over baked potato.

what does "creamed" mean?  usually I think of it meaning everything got blended to a smooth consistency.

I just noticed the amounts on that recipe.  Does that thing make, like, a gallon of gravy?

It scales and/or freezes well.

That was a breakfast staple at my house growing up! I only referred to it as "shit on a shingle" once. Big mistake. Got my behind tanned!  :spank:

My mom made something similar that she called "chipped beef on toast".  She would use deli beef or "cold cut" beef like Buddig.  She would make the cream sauce but not sure what went into it.  My dad would call it "shit on a shingle" when us kids got old enough to hear that.  She would make the toast and spoon the schputz on top and we would eat it with a knife and fork.  I liked it just fine but this recipe looks better.

Well that was lame… I responded with out responding… we would have this 2-3x per month, I luv it… we also had chicken Al a king often too, but that was served on toast or drop biscuits
