Ingredients
- jalapenos (however many it takes, varies depending on size)
- 2-3oz cream cheese
- 1 scallion, chopped
- 1/8 tsp garlic powder
- 1/4 tsp salt
- some kind of cheese that melts/browns (I just used pre-shredded Mexican blend b/c it's what I had)
- a sprinkle bit of chili powder
- Chop up the scallion in small pieces. I like to use a good amount of the white part.
- Mix the scallion, cream cheese, garlic powder and salt in a small bowl with a fork or something until well mixed.
- Half the jalapenos the long way and scrape out the seeds and stuff.
- Fill the halves about 3/4 of the way with cream cheese mixture.
- Place them on something you can cook on in your grill. I just make a little tray out of aluminum foil. It might be a good idea to put some non-stick spray on it but I didn't have too many sticking issues.
- Sprinkle with shredded cheese.
- Sprinkle a little chili powder on top
- Grill it until it looks good to eat. I did it on the top rack while I cooked other stuff. I also threw a chunk of pear wood on the grill to generate a little smoky flavor.
