Yes, when the water in that swamp cooler gets a little low, I add some Starsan solution from the brewday to top it off. If I added plain water, it would start getting funky after a few days. I had just poured some Starsan solution into that tub before I took the pic. Cheers!Jayb: Come on over for some beer! Cheers, Amigo.Very impressive! off topic, do you add something to the water in your swamp cooler? It looks cloudy and a little foamy, do you put sanitizer in the water along with the ice bottles?

Lagers go into the swamp cooler with frozen water bottles to keep them between 45° and 50°. Ales go into the swamp bucket too, but no frozen water bottles so they stay around 60°-63°.The "clearer" ones are the Helles and the Blonde. Those carboys are probably sitting in the 50s or maybe around 60° and they've all been racked onto a gel solution so they're darn clear. Cheers & happy Thanksgiving guys!Looks awesome for sure Ken. The carboys that are last and third from last or the back look to be pretty clear beer as well. When you brew all these lagers of yours do you ferment in your swamp cooler? I hope the beer taste great and flows well for the holiday weekend.

I agree I should have a better way to fasten the notecard to the carboy. I've never lost the card or confused one beer for another so I suppose it's working. Those cards follow the beer from primary to the draft fridge and I have a piece of software that I wrote that keeps track of what I have brewed. If I ever had a serious lapse, I could go back and figure out what is what... I think. Cheers guys & Happy Thanksgiving. Not even a piece of cord to hang the cardboard signs on the necks. Looks like a chance for confusion.Personally, I use a 2x4" corded tag. When fermentation is done I just transfer the tag to the keg lid bail.Otherwise, it's a thing of beauty Ken!
