(Rhatzookeh Yabookami) The apple pancake... The polish version is different, as it has yeast and kind of fries up like a fritter. In Poland their idea of breakfast food, is cold cuts, hard boiled eggs, crusty bread. This is normally served as a desert because you just can’t whip them up in the morning. Well fvck it. I usually either make the dough before I go to bed the night before., or since I usually make these for Sunday Brunch. I’ll put the mix together when I wake ..When I’m done feeling crappy and not lazy, I’ll make a batch, and post pics
recipe
2 1/2 cup apf
1 tbsp of granulated sugar
2 tsp dry active yeast
1/4 tsp kosher salt
1 1/2 cup of warmed milk(100f)
2 eggs beaten
2 large Fuji apples(my sister uses pink lady’s (any sweet one will do)
1/2 cup of vegetable oil for cooking
1 tbsp of melted butter
powdered sugar to serve
In a bowl mix a flour, yeast, salt, and sugar. Add beaten eggs, warmed milk, and melted butter to mix.
Cover bowl and place in a warm dry place, and let mix rise for 2 hours. While the dough is rising, peel, core, and dice apples. After the dough rest, gently fold the diced apples into the mix, and rest again for 10 minutes.
Place griddle on stove with “high heat” after 5 minutes, turn down to medium... cover bottom of griddle(I use my electric one) with just enough oil. If you use a 1/4 measuring cup to dole out the dough you get roughly 12 3-5” pancakes
Unless you’re in active pursuit of Diabeetus, don’t use syrup.. A combo of butter And powdered sugar works best. Sweetened sour cream, whip cream, and cinnamon sugar are also acceptable
