I decided to get a batch going yesterday.  Plan was to re-brew and APA from earlier this year I really enjoyed.  The base for that was 6#'s each of two row and white wheat along with a smidge of cara 20 and acid.  I measured the two row and started on the wheat and noticed the bucket was really full.  SOB!  Scale was in kg not lb.  So I had 19.75 of wheat and two row in the bucket.  I kept the rest the same so .5# each of cara 20 and acid and then just brewed it up.  Threw in a pound of sugar at the end for a nice big double IPA.  Hit it with an ounce each of Galaxy and Citra at 5 and then 3 oz of each at 175* in the WP.  These were open packages that have been around for a while.  The DH will be a combination of Mosaic, Simcoe and Amarillo.

 

I am not sure the last time I brewed a beer that hit 1.080.  I did this BIAB and my efficiency took a big hit to 63% but overall a good day and the glycol chiller is working just as expected.  Helped to bring this to pitching temps in no time.

A beer this big is outside of my comfort zone for sure but it the end I think it will be good.  It also showed me what efficiency I need to estimate for a big beer.  Maybe this will get me to do a Baltic Porter and let it rest till fall.

DH #1 went in last night.  1.5 oz each of Simcoe, Amarillo and Mosaic.  It was at about 9P and using the morebeer conversion that puts it around 1.010 so this one will be over 9%.  I am going to start a soft crash to 50 tomorrow then bring back up to 65 for the last dry hop then crash to package.

Hope to get most of this in 16oz cans for no reason other than cans are cool!

Yeah I think I remember him saying he bought a whole bunch. I was just joking. But the beer sounds awesome. I'm a high ABV kinda guy.

I think I have about 600 - 16oz and 100-12oz. While this should be in 12oz cans it will not be!

The sample last night was great, happy mistake for sure. Now I just need the saison tomorrow to go without any issues.
