Made these last night in a sort-of a clean-out-the-fridge/freezer/pantry effort. Came out WAY better than I expected. End product was more than the sum of its parts.
Marinate 6-8 boneless chicken thighs for at least an hour in:
1/4 cup fresh-squeezed lime juice
1/4 cup Japanese soy sauce
1 tsp Chinese dark soy sauce
1 tsp quality Asian fish sauce
1 big clove pressed garlic
1 tsp freshly ground black pepper
1 finely chopped Jalapeno or Seranno pepper (optional)
2 tsp brown sugar
Grill over charcoal until 160F (will burn, be careful)
Top with bacon and sharp (picante) Provolone cheese, cover grill to melt.
Serve on a buttered, toasted Brioche bun with lettuce, tomato, red onion and the the usual burger condiments (Or honey mustard would likely be most excellent.)
